We put mine back in together. I also had a 350 with a muncie.
My advice is to put as much on the engine out of the car as you can. Don't go crazy but you can add the exhaust manifolds, spark plug leads, heat shield and the spark plugs. Leave the distributor as it gets in the way at the firewall. Also leave off the fan. Install the water pump though. I put the shifter on the muncie and also adjusted that out of the car. Got it spot on and no busted knuckles. I did not have everything on my engine but it would have fit easily.
Get an engine leveller and a good hoist. You need to wiggle it in.
We had to roll the car back and forward a little, change the engine angle with the leveler and lower the hoist.
We even had to let air out of the tires to clear the fibreglass at the front of the hood. The radiator, shroud and support were out of the car.
It took us about 45 minutes to slowly work it in to the car.
Took my 70 sb out seperately because I couldn't remove the welded exhaust. Came out pretty easy. Figured I'd try putting it back with the muncie attached. Went in no problem. Didn't even have the rear off the car off the ground. One thing though, there's no way to install the original shifter prior to the drop.
You guys cheated with with the hurst shifter. I wanted to put one of those in for a few reasons, but that's the best reason of all!!
