Body and engine compartment seals. Really needed?

Body and engine compartment seals. Really needed?
Final stages of a body off project and had questions regarding needs for seals. I had a couple of rust areas and most had seals in frront of or on such as the one straddling the frame behind the #1 body mounts. Both sides of rocker channel had rust through where they set.
Should I replace / reinstall all of the seals on the firewall and behind the #1 body mounts? Seams like they do more damage holding in moisture than help.
Clarification: What areas should I be concerned with sealing with caulk? I will put the foam pieces back,
