I'm considering a complete setup from Precision Brakes out of Oregon because they're the only company I've been able to find that has oversized rotors (13" front/12.75" rear), to go along with Wilwood calipers. There are other companies that make kits, but I just don't believe they've got the oversized rotors to "match" the new calipers.
A friend of mine used one of their kits on his '96 Z/28 and said the quality of the kit was top notch.

The stock system is tough to beat. Unless you are doing a lot of track time the stock system setup correctly with good parts is tough to beat. I have the hydroboost system on a stock setup and this will pin your eyeballs when needed.
13"rotors are hard to comeby for a reasonable price. It can be done but too much $$ Precision makes their own hats so that helps a LOT.
I'm just starting out so I haven't gotten that far yet.
As far as calipers go
The best bang for the buck as far as I am concerned is the Wilwood forged Superlite 4 piston.
The best caliper is the Wilwood Billet Superlite 4 piston
The best low cost caliper is the Wilwood NDL
I sell the above for stock rotors at a pretty reasonable price.
Oversized rotors are still being developed.
Actually, the Precision Brakes wilwood kit is more expensive than the link you put up, gordon. The one I am looking at has 6 piston calipers up front and 4 in the rear with oversized 2 piece aluminum hat rotors. I believe that the cost is over 3k. I agree that with the hydroboost, the brakes are quite strong. However, they would be even stronger with larger rotors and lighter weight.
I'm using Wilwood Dynalite II's in the rear on stock rotors and SSBC aluminum calipers on the front with aluminum hubs and slotted stock size rotors on front. Both calipers have stock size pistons so I didn't have to modify the master cylinder or proportioning valve. Good street system, doesn't leak, and lost 10lbs of unsprung weight per corner.
