how much of a gap should be between the door edge and the fender. and why did they make door adjustments such a PITA

Tolerances on these old Corvettes were not like today's car fits. I would try to balance the front & rear gaps as best possible. I'm having my 70 repainted now & the shop extended the door edges to give about 3/16" to 1/4" front & rear. Looks great.
