The head gaskets don't always blow and allow anything to go to the crankcase. It most of the time blows and allows the coolant to get into the combustion chamber. Do a compression check on all the cylinders first.
Blown head gaskets, Warped Cylinder heads. If I were you, look forward to rebuilding the motor. You won't know much until you remove cylinder heads, check cylinder walls for scoring. It just depends on how hot you got things. I have done an oldsmobile 455 one time that got really hot, and it was rings and bearings was all we did. You also want to magnaflux cylinder heads for cracks. If you had aluminum cylinder heads you can almost count on them being warped. At a minimum you have cooked gaskets.

Ive done that many times and thought my engine was toast,
change plugs and check your valve lash .
If it holds coollant and does not overheat you know the head gasket is good and you didnt warp the heads.
But if everything checks out and runs like crap still ,iyou could have warped some valves.

Did a compression test. All averaged 180psi. Took carb apart; nothing unusual. Intake left to address. Any suggestions?
Sounds like you were lucky. 180 even compression and no coolant in oil means you didn't blow a head gasket or warp valves or tear your rings up. Sounds like a fuel or vacumn issue to me.

You have some other issue.
Overheated a Chevy 350" once, drove it a mile to get home and it cracked the head. Engine still ran fine but the radiator kept using wtr. In fact used it for several wks as transportation. Replaced 1 head and back on the road for well over 50K miles.
Swap in a known good carb (u gott'a tool box spare don't ya), then try a good dist.
