Short answer is yes it CAN run without the computer. However, it'll run like crap without it. If your computer or any of the sensors are hosed it's sometimes easier to just go to a non-computerized system. However, if everything in the system but the carburetor is working fine then just repair/replace the carb. The system isn't that bad when it works.
if the computer is gone the transmission torque converter will not lock up.. if you want it to lock up you can get a kit from bowtie or use a switch and ground the test connection under the console near the cig. lighter

If you're creative you could. You'd have to set a timer for the check engine light to come on when you start it up and it has to turn off after a few seconds. Other than that, they'd be hard put to tell any difference.

Unless you get someone that really knows what they're looking for, all they need to see is a "check engine" light come on and then go out . As long as you pass the sniffer, you should be fine. The cat and the air injection should get you there.
