I've heard alot of good things about Demon carbs :reddevil . They're basically a Holley that has been massaged by Barry Grant. If a demon would fit under the stock air cleaner of my '79, thats what I'd be running. Just my $0.02.
Assuming that you don't have an NA9 optioned 1970 LT-1, the carburetor for your application (Holley LIST R 4555 A) is still available brand new from Holley. Pretty expensive from what I recall...
If you have the original date coded Holley, I'd personally send it out to Jerry Luck and have him rebuild/restore it. It will look brand new and work better than any "out of the box" carburetor... Most likely for a lot less money.
I have a 750 DP on mine. I bought it brand new. If I were to do it again I would go with the Demon carb. A good carb for a few more dollars than the Holley
