You can go bigger if that's your true compression. But you can also go as small as you want if you can manage the detonation with the high cylinder pressure.
But really, the question is how much compression do you need to be able to use a particular cam? You should be fine with that cam at that compression.

Yes you have it backwards, normally you pick a cam, heads etc. that compliment each other, and then you choose pistons for that the compression ratio you need to run the cam
As stated above, you will be fine at 11:1 CR with that cam
