While you have all that stuff out of the way, why don't you cut the floorpan and lower it ? When you're done with that you can replace the carpet as well....

I did that to the passengers side. I cut the tunnel and moved it inboard a couple of inches to give my wife for Purse room. The driver always has more foot room and I decided to give my wife more room. It is finished now, painted and dyna matted so it doesn't show.

MYBAD, the car went already through a chassis off nuts and bolts restoration and ,apart that, i've already spent 30.000usd+ on her, i only need a lightweight flywheel for the moment..thanks....
