Main concern is the 210cc intake runner. How bad would this hurt my low end performance? I've read that these heads are great for high RPM's, but what about mid range on a small cube 327?
It will depend on the cam you choose. A narrower LSA will yield more torque down low, while losing a little bit up top. 110-112lsa would be a good choice. Also the duration and lift of the cam will determine your rpm powerband (range)

In the development of the LS1 they found that the large port runners and small valves increase velocity and swirl. That is why the LS1 and Gen3 small blocks have a 205cc head with a 2.00" intake valve.

It is a 3.25" stroke engine. You won't have much bottom end to loose anyway.
I would use the 170cc Edelbrocks if you do not already have those other heads. JMO.

call some of the head manufactures tell them you want to run a
210 runner head with 2.00/155 valves on your 327.
