The dim could be caused by numorous things.
Low voltage
Wrong lamps
Nicotine film
Dirt/dust
Old age/Bulb darkening
Wiper contact on dimmer bad
Resistance in the ground return path
Although I have no plans to change to LED's at this time, they do promise 50 times lamp life. A plus when talking about the hard access sometimes to certain lamps.

I would start at the switch.
When I rebuilt the interior on my '76 it also got all new bulbs. Didn't affect the brightness of the dash at all at night. It is just a dim design and I think the LED solution would be great. As long as they work with the original setup.

The LEDs work great and the dimmer...which I think is bad, will work with the new LED bulbs just fine. If you get all white for the lights, blue for the bright, red for the brake, and green for the signals...it all works well and looks great when finished.
That being said, I think you should look into a new headlight/dimmer switch or you may not think the new LEDs are bright enough either.
