I have a Hays "street" clutch in my 68 427/390
I see that you can buy the pressure plates and disks separate for the street clutch. The standard clutch kit comes only as a complete kit.
Does this mean I can just get the disk?. The pressure plate looks fine and is 200 bucks alone. The disk is 100. So obviously I would like to save 200.00.. Thanks..

Yep. I just replaced the clutch disc on my setup. The McLeod pressure plate was fine, I just needed a new disc. Check out the flywheel, have it turned if necessary.
