Temp Higher after adding
proper level in my stock '75. Temp gauge was always running at about
the 180 hash mark. When I recently drove it with outside temp at
about 90 degrees temp gauge was just below 200. Any ideas why
this would happen?

Just to make sure...pressure test your cooling system and the radiator cap. If it's not holding pressure, you need to find out and correct it immediately. This is preventative if nothing else. Heading into summer and high temps you don't want to find out you have a bad hose, blown head gasket or worse.
This isn't all that likely but what at you might find is there may be air in the coolant system if it was low and added coolant without burping it. Let it run up to normal temp with the radiator cap off and let any air in the system come out. Then you can check the level and see if it's correct and add more while the engine is running to let it circulate and let any additional air out.
