Personally i don't like stroked engines because this creates a lott of side-loading on the pistons, thus more wear, but it is all up to you.
You could put in a 3.75" crank, maybe some clearancing is required.

3.875 w/o too much worry about core shift. 4.00 is the max for these blocks, but you had better sonic test the block first. You will need clearancing no matter what. Oh and $4k - $6k.
