I have been llooking and looking and have not been able to determine what the difference is between a "Passenger Vehicle" and a "Truck" carb. I can see jetting differences, but what else?

It depends on what year you're talking about. Most of the truck carbs have different booster venturies, producing a stronger fuel metering signal at low airflow velocities through the carb (lugging and pulling operations typical of a truck). Post-75 Q-Jets have completely different primary metering rods for the truck carbs (power tips are .036" diameter instead of the passenger car .026") due to this booster venturi difference. For this reason, it's difficult to set up and jet a truck carb for a high-rpm light-weight vehicle insrtead of the low-rpm heavy pulling application intended for the truck carb.

Difference between auto and standard trans carbs is in the throttle lever. The AT carbs have provisioin (hole) for the kickdown cable/linkage. MT carbs will occasionally be jetted just a touch richer, but not always. Generally, the carbs are interchangeable.
