Single lip would be for a new crank, where there is no groove worn into the crank by the previous seal.
The offset lip would be for a used crank situation where there IS a groove and you don't want the lip of the new seal to ride int he same groove weakening it's sealing capabilities.
The double, though I have not used one, seems to me to be a combination of the two, and would be the best for sealing both old and new cranks.

I recommend using the Fel-Pro once piece pan gasket. There great!
So wonderful, and they even come with these really cool screw in studs that go up first, and the seal and pan clip up onto them and they hold it all in place while you start bolting the pan on. No more fighting with the gaskets as they fall off while you're trying to hold the pan with your knee and stomach.
