They are split between fuel delivery and ignition.
For the fuel delivery items the problem may start at the fuel sock in the tank. If it is limiting the amount of gas at the pickup, then when the car is running under load the amout of fuel supplied will not equal the demand the car will stop running. Letting it sit and cranking on it will continue to add gas to the bowl and get it running once again.
For the ignition problems curving_edge has a great thread to read and follow. He had similar problems to yours also.
Some more drama to the story. I let my car run at idle for about 10 minutes and it died out same as on the road. Idle just started dropping slowly till it shut off. Then, i saw the glass filter slowly empty. I could hear fuel flowing down like into the pump or something. I'm convinced it is the fuel pump.
I guess it could be the fuel pump but I would be surprised, fuel pumps either work or don't. The fuel lines are more suspect. Did you replace the sock at the pick up tube when you replaced the tank? Have you tried running it with the gas cap off to see if it acts the same, that would answer any tank venting problems. You could disconnect the fuel line from the carb and direct it into a container and crank the engine to see what kind of output it has. If it starts out good but then peters out, I'm gonna guess that the supply to the fuel pump is restricted. The "S" hose at the fuel pump to supply line could be colapsing, make sure it has gradual bends and not kinked. Also look at the hoses at the tank and make sure there are no kinks or that the hoses are not extremely soft indicating that they are comming apart internally and causing the restriction. Another possibility is that there is debris from the old fuel tank that is blocking the line at some point.
if you just redone your carb and have a holley it could be as simple as the float level needs set higher had the same prob with mine after put kit in it
finaley had to raise it higher than the what you normaly set them
it would also die when i hit the brakes and got in it really hard
did you check the sock in the tank i had a problem with my 74 and it sounded the same i change the dist and got better then started to do it again . but it really did it more after filling the tank up . so i got all the fuel out and drop the sender out the bottom of the tank and took the sock off and put a external filter right after the hose comes out of the tank to check the shi!! runs great.
my money is on a fuel line sucking air. I gather its a mechanical fuel pump? I saw where you were going to replace it. I had a similar problem once and it was the fuel pump. Make sure all your rubber lines are in good shape and not cracked, give them a little twist and see.
