What is considered the correct ride height for a 75 convertible with 255-60 tires on standard corvette rallys? I've got 271/4 in the front, but 30 in the back.

Maybe someone with a '75 AIM will chime in with the exact figures, but your Z and D heights at curb weight (fluids at capacity, including fuel)should likely be in the range of about 2.5 to 3", given a std suspension. Technically, these suspension geometry heights should be given a higher priority than other trim height measurements, such as fender heights.
Lower (to a point) is generally better for perf, and given the rear is easier to change, I'd suggest lower the rear to about 28" in your case. Long spring bolts for this are available thru many Corvette parts houses.
