0-60 around town, minimum highway I'd go with a 350. Reliable, tough and fits with an absolute minimum of hassle. The 700 has a low first gear, but it shifts out by 10 MPH if it's setup correctly except at WOT.
Build a 350, use the HD sprag, Kolene steels and red clutches, set all the clearances in the clutch packs to the minimum, leave out the wave plates and add another steel, then use a Trans-Go shift kit. Install the shift kit using the directions for the HD level and have fun.
