I may remove my non functioning AC with the install of my new engine...
is there a way to make my car look "factory no AC....

Sure, just get an air box from a non-A/C car. Call around to some Corvette parts recyclers and see if anyone has one. Other than that, Ebay, and the forum Parts sections.

Depends on how "perfectly non-AC you want it. Lots and lots of changes between AC and non AC cars. Just flip over to the AC section of the AIM. Some "glassing" to undo, some to do. Heater core and hoses completely different.

the heater core box, center console shift plate , center guage cluster , those are the main pieces that differ

If you are replacing the engine, why not get a functioning AC? I think you would be better off in the long run. Cheers.
