List your suspension setup, that may help us recommend alignment settings.
But keep in mind you're running bias ply tires, race tires at that on the street...I don't know what your roads are like in Italy but whenever I drive my car on the bias ply's on the street it's all over the place, following ruts and seams and crack fills in the road. Very nervous like you said. Those Hoosiers are not good street tires by any means, they're race tires and are meant to be on the track.
I recommend if you're gonna street drive the car that you get some better tires for street driving.
