Default How about this?

How about running 180 at car-cruise speeds (20mph-ish) and 210+ on back-roads? Slowing down on the back roads brings temps down.

Does that behavior indicate anything in particular?

Retarded timing and lean A/F ratio will make anything run hot. That is where I would start. A pro can set the timing where the book calls for but if your mechanical advace, vacumn advance and advance curve are incorrect you will still run retarded. A lot of these cars sit, get a little condensation in the distributor and the centrifical weights freeze up, the vac can diaphram leaks or lower plate gets a little corrosion and don't advance properly. This is more common than you think and using a timing light setting initial don't catch it.
