Have a 71 LS5 corvette all stock. Was wondering if you can put any taller of an intake manifold on there with out hitting the stock big block hood? The motor is out of my car right now or I would just measure. I have the stock Q-jet, edelbrock or Holley carbs I could use in combo with a better than stock cast iron low rise intake.

There really isn't any wiggle room under these hoods with big blocks stuffed in there. I have a 68 427/390. I dumped a poor performing Quadrajet for a spread bore Holley and I had to go to a slightly lower profile air cleaner. Stock manifold. I don't think there is any room to go with a performance manifold that is any taller than stock even with the BB hood.
When I ditched a stock height aluminium intake for an edelbrock performer on my 72 BB I had to switch hoods. Picked up a small block hood at a swap meet and put a 4 inch cowl on it so I didnt mess up the original hood. In the process of a frame off and plan on going back with L88 style, It is sitting in the garage collecting dust. Would be willing to let it go cheap if you decide to go that route.
You mentioned possibly using a Holley carb instead of your QJet. I measured my 4150 Holley and my QJet from the base of the carb to the air cleaner mounting surface.

No matter what you do, you will have less clearance with a Holley vs. a QJet.
