I'll bite.
Why the body is coming off will affect how much of it is disassembled.
How careful and thorough are they going to be when they take your car apart.
Are they labeling and bagging EVERYTHING?
Are they taking the interior out?
How rusty are the body mounts?
Are they allowed to twist and cut bolts off?
Are the same people putting it back together?
If things go well ... 2 people, 1 day?
So 16 times the shop's hourly rate.

only you will take the needed time to bag and tag all the parts.
and you need to know where the parts go.
It's not difficult, just go slow and easy.
mentioning a body off to anyone will shoot $$ way up !

If the car has recently been body off restored or it was 1976 and you had just picked it up from the dealer, you're likely looking at 8-10 hours. You have to remove both bumper covers and reinforcements, all body mount bolts, the radiator support, disconnect heater core, a/c, master cylinder or brake booster, parking brake cable, vacuum hoses for headlights, vacuum hoses for heater controls, engine wiring harness from the fuse panel, throttle linkage, transmission linkage and seat belt support cables, plus some other stuff I'm not thinking of.
Now factor in that your car likely isn't in restored and it isn't 1976 so you have 33 years a built up rust, corrosion, etc. to work through. This is not going to be a short process.
Then factor in what others are mentioning about how thorough a job the shop will do bagging, labeling and documenting the process.
