I have a 1976 Corvette. A previous owner put an Edelbrock intake manifold on and a Holly carb.
The accellerator cable seems to be too long...or the carb is sitting further back than the factory Rochester. The gas pedal sags and when I floor it the car is only at half throttle.
The bracket for the cable is in the wrong spot. My 69 has a holley on it and the bracket would slip and turn so the cable was just like yours. I finally drilled the bracket and put a pin in it so it'd stay put.
The adjustable throttle brackets that bolt to both driver side carb studs will solve the problem but you may not like the non stock look. I used a chrome bracket that only attached via 1 carb bolt but had a lock bolt that contacted the intake that kept the bracket from rotating towards the throttle and losing pedal travel. The bracket that came on my car did the same thing you are describing, it would slowly rotate in over time. On a related note, I also swapped the stock cable for a lokar cable, not a fix for your problem just a side note on a mod that I'm glad I made.

Move the cable attach pivot on the carb to a higher or farther forward location. From what you just said in your last post, I suspect that even with your bracket in the correct place, you still don't get to WOT.
The cable attachment pivot is as far forward and as high as the carb will allow. If I disconnect the cable it can travel another 1 to 1.5 inches forward, pulling the gas pedal to the correct position.
This is one reason that I wasn't sure if the cable is perhaps the wrong one for a 1976 or if there is something else that I am missing.
I would just try a universl style adjustable bracket from the parts store, it's a cheap way to see if the bracket is to blame. I wouldn't use that chrome junk they sell forever as they are flimsy, distort and bend over time but at least you'd know if that's to blame.
