How much can be safely cut when resurfacing a flywheel. I dont want to have to add shims or buy a new flywheel for my 73. I had the local parts store resurface mine and told them I want them to shave as little as possible. They went .005 and there are still some signs of hot spots. Should I ask them to take of some more or run it as it is?

A few more 0.000th's won't make enough of a difference to matter. I'd have them do the minimum to clean it up and then see how far it took before worrying about geometry issues.
FWIW, rather than a parts store I prefer using a long established clutch shop who takes the time to clean, peen (not the surface), and then properly non-directional diamond grind (not lathe) the surface, as seen on the Hays SFI one below (any visible imperfections are only lint in the protective coating). Sure it may cost a tad more and I have to drive a few more miles, but IMOE they turn out as good or better than new work and have usually done so while I wait.

WOW Mine looks like a POS compared to that picture. I found a machine shop that will grind it for me. I am going to have them do it. I hope the parts store didn't ruin it.
