Default 79 Corvette - Need Replacement Motor, Input?

For those of you following my last post, my motor in my 79 Corvette needs to be replaced. If you don't know about it and want to read it all 10+ pages, this is the link http://forums.corvetteforum.com/c3-t...need-help.html

Hahah, long story short, we took the motor out, and apart to find the block is cracked. If you want to see the project here is a public link to my album on facebook dedicated to it (you don't have to be my friend to see it )

Sooo I want to stick with a 350 sbc but there's a lot out there and I do need/want to replace a few things:
Water Pump
Fuel Pump
Headers
I love the Edelbrock Air Pro Filter
Possibly Intake Manifold if I didn't get a long block.
Possibly Carb, unless I can find a way to make the old one shine.

I'm going to end up restoring the whole thing to include the chassis, so I don't really want brand new shine under the hood mixed with something that looked like it survived the war haha.

All input is welcomed. I don't know a ton about cars, the engine removal process I learned alot, tried to absorb a lot of information but still much I don't know. Thanks!

Decide what your wallet can afford, then take into consideration the minor complications each step up the horsepower scale will bring.

Talked to a guy at the Route 66 bash at San Berdoo Saturday, he had a 79 too (as I do), he put a crate from Jegs that he said cost him around $1600 and he was very pleased. I think he said he was around 240 hp.
