Which is better to run with headers?

Depends on the header. Many headers will not fit with angle.

I have cast iron angled with Hooker side pipes and the only difficulty is spark plug access. This was resolved by using a shortened plug socket with one of the six sides cut out.

I had a set of angle plug heads and they are a PITA, get strait.
