You use the 'fill' plug hole to suck it out; then you use it to add the new stuff until it just starts to run out that hole.

Most people never change it....Because I dont beat the heck out of my car and it has stock-ish horsepower I'll make sure it's 'topped off' once or twice a year and change it every few years.
Differential and gear boxes are designed for long oil change intervals unlike engine oil.

GM obviously didn't think people would change it - thus the lack of a drain plug.

On a side note.
I changed my oil, drove about 1000 miles and changed it again.
It was almost as dirty the 2nd time as the 1st.
There must of been a lot of stuff in the bottom that didn't get sucked out.

I just had the diff fluid changed in my '07 ZO6. My factory Service Manual calls for diff fluid and friction modifier as most on this thread have stated. When I reviewed the work order, I noticed they didn't use any friction modifier, so I asked the service adviser about that. We went to the parts counter together and the parts man looked up the required fluid. Seems GM decided their newest diff lube doesn't need a friction modifier.
The oil (diff fluid) the dealer put in my ZO6 is GM #88862624. The Z takes almost 4 quarts @ suggested retail of $22.46/qt.!!
Remember these cars (since MY 2007) have a 5 year/100,000 mile power train warranty, so it is not likely that GM would spec. an inferior product when repair would be on their dime if the diff frags.
Just my 2¢.

I have been saying that the newer synthetic gear oils do not need the additive for years!!! Try convincing the nay sayers that 30,40, 50 year old rear differentials that original were spec'd for an additive back then, now do not need the additive any longer with the synthetic gear oils. I have been using Mobil 1 75W-90 synthetic gear oil with no additive for 22 years with zero issues. Good luck with that!
However, the stock lube DOES.

See post #48. I use Mobil 1 75W-90 for over 20 years but have also used Amsoil. I trust Redline Gear oil as well. If none of those work, I would trust Castrol EU as well, if they have a synthetic.

@Primo, here in Europe you can easily get Valvoline or Mobil 1 from ebay. Pay attention to the specific oil you are buying as Valvoline for example has many 75w90 gear oils but only 2 valid for limited slip differential:
