I'm pretty sure that your 77 was designed to run around 210.
By the late 70's, all cars were using a 190 thermostat and had a normal operating temperature around 210. This was done to help reach the Federally mandated emission levels. The higher operating temps, help burn off the emissions more thoroughly.
I do remember the SBC running at a higher temp after the smog systems were coming on them, even mid '70s. I remember first seeing the 200 plus temp on the gauge in the new vehicles and asking about it. Ofcourse you need some temp so that the components swell properly/correctly, but I'd say that 160 to 180 gets it. Used to in the older ones. I realize that the new engines run much cleaner, but I can't help loving the older ones.
