Is there an ideal oil pressure? I have a 350, bored .060. It has an oil pressure of 80. Is that normal? Seems high, since the gauge only goes up to 80. What's normal, safe, high, etc...?

Is that pressure measured at idle? Are you using the factory gauge and believe that to be accurate?
As a rule of thumb, that is high but, many rebuilders stretch or shim the oil pump bypass spring to raise pressure. Check it with a good gauge and be sure that it is actually that high. The viscocity and temperature of the oil also has an impact on pressure.

Factory gauge in car reads 80 at idle and fluctuates around 80 while driving. I have never verified the pressure gauge as accurate. I just assumed it was.
I agree it's high. I've got a worked 350 and mine is 20 at idle and 40 when running. Make sure your factory gauge is good. I put in a mechanical gauge in cause the factory gauge read 10 at idle.
Factory stock engines (most of them) run at about 40-45 at highway speed and can run anywhere from 10-20 at idle. If your engine is putting out 80 psi, it has had a pressure regulator spring change (or a complete pump change).
