Default Upgrade help

I am in the process of changing cylinder heads and maybe intake on my 540 cuin BB. Here's the question: Should I change the cam while it is opened up?

Can I change the cam with the engine is in the car?
Can I remove the timing cover without removing the oil pan?

I have been running dual quads and am considering changing to an Edelbrock Performer RPM with a Quick Fuel Q-950-AN or Q-1050-AN

If I change the cam, to what?
540 cuin
10.3:1 compression ratio
Edelbrock Performer RPM rectangular port heads with 2.30" intakes and 1.88 exhaust. pockets blended, ports matched to the Felpro gaskets smoothed and exhausts polished.
The current cam is hydraulic flat tappet. 240* at 0.050, .560/.575 valve lift in/ex.
Muncie M-22 trans. HEI ignition.
The car is 90% street use but I would like to be pleased at the strip.
If I change the cam, I want to go with a roller. I would like to hear suggestions.
