Started my rebuilt 406 for my 72 c3 on an engine stand to check for leaks and the electric fan didn't turn on and the temp got up to 230 degrees for a minute or so before I shut it down. Will this hurt it? It has dart Iron eagle heads but am now worried about cracks in the block or warping of the heads.

Guessing that the engine didn't have enough time to hurt itself by shutting it down that quick.
I'm assuming that you are running a known functional mech water pump and both sides of engine are filled to the intake (and beyond) with coolant? Rad hoses are not collapsed or otherwise, blocked?
As long as it's flowing coolant properly (no air pockets), another check is whether the thermostat opens at its rated temp. A blocked t-stat can also cause overheating issues in little time.
