Damn, that's with only 1/2 a coil removed? Seems that the difference shouldn't be that noticeable. Is there any rubbing issues when turning from stop to stop (left to right)?
May be a tad too low but I still like it. Do you like it? In the end, that's what counts.
How much daylight do you have between the lower control arm bumpstop and the frame? If you look at the Chevy Power book, they say you can remove a small amount off the tip of the rubber bumpstop to allow a bit of suspension travel on a lowered car..
I like it. My 78 with iron heads and all the trimmings looked about like your 1/2 coil removed pic. Once I put alum heads on it looks pretty much the same as your "before".

The driver side seems to be about 3/4" lower than the passenger side ....I wonder if the pass side spring didnt seat properly. Is there something that would cause it to sit too low? If both springs are in the pockets, what would cause a 3/4" difference?

what you guessed - spring not in its pocket, however, a brief drive should get it to where it belongs.

My passenger side was slightly lower also, after I test drove it and properly torque the control arms while the vehicles weight was on them.
what I did was measure the frame to ground clearance and found that it was the same on both sides, so I knew the suspension was level. what I found to be the problem was my right side bumper support bolts were loose, causing the right side of the nose to sag. I jacked to nose up to the correct height, and torqued the bumper support bolts down. problem solved.
To me, it is too low. I wouldn't have cut the springs. BUT, If you like it and it rides good, then NO, it's not too low. Get out there and enjoy the spring.
When you run out of shims on the front suspension, it's too low.
Mine had a coil cut up front before I got it. Largert radiator, added Vintage Air, a 6 speed Richmond brought it down a little more. Longer rear bolts evened it up. Looks about the same as mine.
