This is a general list for everyone, not just your app. You already have some of this, and the 'vert top helps some:
Aluminum water pump, intake. Headers vs exhaust manifolds.
Get rid of things like power antannea and go to a fixed mount.
If you have glass roof panels, get them swapped for the acrylic units (both of my panels togeather weigh less than one glass panel).
How drastic do you want to get? How about things like A/C, heat, speakers and radio?

I don't know what parts you would consider as being practical to change out but . . . Like 'em or leave 'em, here are a few suggestions.
Aluminum driveshaft and halfshafts.
80-82 door glass and windshields are supposed to be lighter.
80-82 DANA 44 gear housings are lighter.
Use the lightest weight aftermarket rims vs. good looking ones that are heavy.
Radio delete.
determine if any of the bumper supports / crash protection components can be removed or fabricated from lighter materials.

Here's some things I've done:

Aluminum radiator
Aluminum water pump
Alumiinum heads & intake manifold
Headers
Fiberglass leaf springs - front&rear
No rear sway bar - up to 12 lbs savings
Lightning holes in headlight action limiting bars - they are the plate steel bars on the side of the headlights - you could fab. aluminum ones
Other things on my do list:

Ganey, how much does the heater weigh?
Flynhi, another great post you have going. You may want to take into effect where you are removing the weight. Its obviously more beneficial to remove weight that sits higher up (like heads, acrylic top) as opposed to weight that keeps the center of gravity low like driveshaft, etc.
I too am trying to remove a ton of weight off my car. I think I've taken the horsepower as much as I like so now I'll focus on removing weight. I plan on changing out seats, changing to an astro top, removed spare, have fiberglass rear spring, no rear sway bar, no A/C, aluminum heads and intake.
I can't imagine that a filled aluminum radiator is barely any lighter than a filled OEM radiator. My OEM one was pretty darn light when empty.
The problem with losing weight is that your suspension changes. I noticed that after swapping to aluminum heads my front ride height was raised slightly.
Guess I'll need to cut front springs one of these days to bring it back down.

Don't forget removing jack too. That sucker is heavy!
As a related note. I was using my dad's jack that came with his '91 Nissan 300Z and that sucker is LIGHT. It looks very similar to my Vette jack but its made of aluminum. Looks really cool and was featherlight. May be a good (relatively cheap) upgrade for those who want to keep spare tire but still lose some weight.

Great topic Flynhi! I think by swapping the brake booster for hydra booster you might loose some weight. I've been a busy boy fabricating aluminum parts. Here's few examples:
This is the inner rear bumber. The original item was 32Kg and this is only 6Kg (sorry, but I don't have a glue what that would be in pounds) and it won't rust either!
This pic shows the use of aluminum on the engine, all brackets, pulleys, water pump, heads, intake etc. Notice the small late model style Power steering pump and the small A/C compressor.
I removed all the orinal A/C stuff and replaced them with Vintage Air's compact gen 2 system. The evaporator is hiding under the stock dash and I filled the ugly heater hole on the fire wall with custom made aluminum plate.
I don't know yet the total weight difference of the car, it was 1640 Kg with half tank of gas and w/o driver. I have pratically replaced everything since, so it'll be interesting to see the difference when it's finished. :cheers:

Groovyjay, that is one sweet pulley set. Is that one of the serpentine setups that allow you to relax the tensioner and replace the belt in about 30 seconds?
I remember trying to change the belt on my mother's '96 Caravan thinking it was going to be the biggest PITA in the world (aside from spark plugs in that thing which I refuse to touch) but barely took 5 minutes. Takes longer to do a belt swap on a 'vette where all the belts are readily accessable. Giving serious consideration to a serpentine conversion.

For what you're going to spend on getting rid of weight, it might be cheaper to add some horsepower. There's usually two ways...at least....to get the job done. I would invest in some ignition, intake and exhaust parts and then take it from there. You'd be surprised how much hp you can gain with some simple "add-ons".
