So my 74 went in to a local for some work, said it had a sticking auto choke so was removed along with a lot of other work. Now I need to pump the gas few times to start then hold revs around 1k ish for it to warm then attempt to drop in to Drive and go without stalling if not fully warm.
Two questions:
1) Should i be looking to get the auto choke back in? Or keep removed?
2) is this starting process normal if no what should I be doing?

I believe the problems you're having are both the result of having the choke removed.
The choke changes the fuel/air mixture in the carburetor making the car easier to start when cold.
It also increases the idle speed until the engine is at operating temperatures.
I'd suggest you have the choke re-installed and properly adjusted.
There are many mechanics now who have never seen a carburetor much less an operating choke. When the choke and carb are working properly one full depression of the gas pedal will set the choke and give a shot of gas to the engine, then you turn the key! Voila!

"Fixing" broken parts by removing them is a trademark Bubba move, and can only be used with the express written consent of Bubba, Inc. (Implied oral consent just won't cut it here, folks.)
Bring it to an old-timer, and ask him to fix the choke, should be an easy job for a mechanic who has some experience working with carburetors.
