I can understand your concern since you didn't take the car apart.
I think I'd spread a large blanket on the floor and then start putting the various parts in their relative position on the floor.... left dash, center gauge cluster, right dash, shifter console behind gauge cluster, e-brake console, seats/tracks, seat belts, right and left quarter trim, door panels with trim and winder lock, etc., etc..
You could then use the AIM as Mel suggested to help you figure out what might be missing.
Getting the proper fasteners in the proper location may be the biggest problem you'll face. Determining what what the fasten should be will be a challenge too. You might consider buying an interior fastener set that has the fasteners bagged and marked as to where they're used.

I would suggest the AIM too. But I would do research on the part numbers to insure you get the correct pieces. Especially with fasteners as Alan said. Some suppliers (not all) supply screws and such that are "close enough" and not really correct. There are a few good web sites that deal with GM fasteners. They usually focus on Camaros, Chevelles, and Novas. But most part numbers were used in a lot of models.
