Take in to consideration the width of your wheels. I wouldn't want to go over a 275 tire on an 8" wheel. People have gone beyond that but I prefer a short stiff sidewall that doesn't roll over in turns.
I agree with the rim width problem, however I've actually run 255,275,and 295 50's on the stock 8" alloy. The 50's were the last and best combo for fit under the fender, and in your face nasty look. The only thing I didn't like was the pinched sidewall, which wasn't all that bad. I ran 40,000 miles on the last set and the center wore slightly more than the edges. I went with 15x9 Weld Draglites to fix the pinched look, and hopefully the wear issue.
The 275's fit well, but under hard cornering I could feel the rear end hula dancing. The 295's are solid as a rock.
Like the other guys said you can go bigger, I just bought bigger ones that stick out past the fender. However, you have on the biggest ones that you can do very hard cornering with and not rub.
If your planning on some hard driving I would actually drop back to 245 all the way around. Depends on what your planning on doing. My new rims are 8" wide in front and and 10" in back. So much for my harddriving now.
I have 295/50s on mine. The only problem I had is that the parking break cable touched the tire. No problem, I disconnected the cable and wired it back. It's not like the parking break worked anyway :D
