So I learned the hard way that the "mr gasket" high performance thermostats are now complete crap! I have read that they were made by Robert Shaw and rebranded as well as some of the "stant" models..... but here the issue. Robert Shaw no longer makes them.... Instead they have them made by another manufacturer in china and rebranded and sold under all three competing names... the quality has dropped tremendously.
I ended up finding an old American 180 degree stant in my garage and my unstable temp issues are gone however the master cylinder decided to fail on me a couple hours later.
At least I was able to put 275 miles or so on the car/new engine this weekend
Apparently stant still makes at least some of their thermostats...
jury is still out on whether the $30 Robert shaw units are in fact from the same factory in china and identical to the cheap autostore wall mr gasket units but they sure look identical. (maybe mr gasket gets the seconds..lol)

I had similar issues in the past and that is why I check every thermostat
in a pan of boiling water on the stove.You can also check the opening setting with a thermometer.
