I have a new 383 in my 80. It has the Edelbrock top end kit with the Performer RPM roller cam. On start up I get some lifter tick and then it goes away after a minute. Something to worry about? New motor with 10 miles on it, plenty of oil pressure.
Loose or leaking exhaust manifold gasket . I had one crack that was near new ....replaced ticking went away. .....I ve seen many cracked iron manifolds do this too.
As engine warms ...expansion cuts down the leak in the exhaust.
What motor oil are you using? A thicker oil takes longer to get somewhere useful than a thinner one. Probably, you can use a 5W30 oil in a new engine, but check with your engine builder first.

I have 10w40 in it now. Maybe I will try something a little lighter.
Did you use a length of rubber hose to hear if it is coming from the valve covers when cold
It's a lifter noise. The only reason I am asking is this is the first time I am using Edelbrock performer rpm roller lifters and wanted to know if the noise at start up is normal.
I will write this...i installed a set of roller lifters form another manufacturer....and even though I primed the engine and manually turned the engine slowly while priming it ...the lifters stuck...and made noise like crazy. I removed the intake...removed the lifters and disassembled them...cleaned them up...oiled them manually in a fixture on my drill press...put them back in and had no further problems since. The factory assembly lube was the culprit used during assembly of the lifter. NEVER Will make that mistake ever again..

I had the exact same issue with a set of Comp roller lifters. Pulled the intake, rockers, rev kit, lifters, sent them back. Comp replaced them. Reinstalled, no problem, Lots of work!!! The assembly lube was the issue. They changed it now because of multiple problems with the old lube.

YEP...I did not want to name the name brand...but you are CORRECT. Actually Comp 'ticked me off' so badly....due to making me feel like the problem was my fault....And NOT having any paperwork/instructions in the box stating that you need to disassemble them and clean them and lube then before you put them in.
I do not have a problem in doing what is instructed....but I wish that they would say..."You are buying part that is INOPERATIVE...but it can be a great part if you spend gobs of your time in getting it to work as designed.

I'm 5 maybe 10 minutes from you, PM me if you want me to look at it. I'd use either 10-30 or 15-40 Delo both with Red Line EOS. 10--40 I do not like.

NO "noise" is normal whether at start up or any other time IMO.
Morel HYD roller lifters make a bunch of noise when cold, but usually quiet down to the normal "sewing machine" sound when hot.
You could go over your valve adjustment again and check preload etc etc but.. From my experience with several sets of aftermarket HYD roller lifter sets, the preload doesn't seem to have a huge affect on noise on cold starts...especially on the morels.
If I were you, I'd run thru the valve adjustment just for peace of mind... Then let it ride.. If they are quiet when hot, they're fine. 10w40 oil is fine...
My Morels in my 496 clatter like mad when cold, preload has been anywhere from 1/8 turn to 1 full turn.. Made no measurable difference on cold start rattle..
My LS7 lifters in my 402 are dead quiet cold and hot...ironically..
Even my wife's bone stock G8 with the 6.0l has some lifter clatter on cold starts.

You learn to live with it..
I agree with Alan, I got the same noise at cold start up. I have Morel Hyd roller lifters. Typically once the temp gauge reads past 140-150 it quiets down, then sounds like a sewing machine as described above at operating temp.

Mine quits down after about a minute maybe less and then you hear normal valve train noise.
