My 72 reads EXACTLY the same as yours and the IR gun shows 190 at the thermo housing.
On 90 degree days mine reads dead on that line and slightly below on cooler days. IR gun shows 178-182 on radiator hose just down stream from thermostat. ZZ454 w/ alum radiator, mechanical fan, and 180 thermostat.
Yeah I wonder if you just got a dud or if they are all off...
I found the same TS-6 sensor on RockAuto for $6. I'll report back when it arrives. Hopefully it fixes my issue too.
Good Luck.. Hope that it will work for you like it did for me!
On my way home, I actually hid 210 degrees on the interstate at 80 mpg but it cooled back down under 210 when I slowed down. I think it's due to the clutch fan..

Hell, I was hopin ur car was actually runnin cool. I wanted to find the cause so I could appy it to my hot tempered 496.
I was able to keep my old 600 HP 406 in my old race '68 Vert pretty cool, usually under 200 degrees.. Triple electric fans (permanently on), high volume water pump and a the top of the line Griffin Radiator.. That car never ran hot with that setup.. Engine cools down quickly at idle as the clutch of the fan is fully engaged..

I have to scratch my *** a bit to remember my memory...but there are two different sensors for these sharks....early and later....dunno the year changeover.......but yeh....
and I note that my aftermarket capillary temp gauge is about 10f high via my calibrated IR gun.....which is known via two other temp gauges including a FLUKE gauge to be correct, dead nutz ON....
.CAN you believe that a car of medium color can reach 160f on the paint in Florida direct SUN??? serious....and it's not even black, just a light green.....
