There's a loud running noise coming from the rear of my car, and the pitch increases with speed. It's also temperature sensitive. I don't hear it on warm days, only when temps are below 50F or so. Don't remember ever hearing u-joints sound like this, but it's also not the high-pitched whine like worn gears make. Any ideas?

Tires can make a lot of noise until they warm up. I run 24/20 psi in my tires and they'll make quite a bit of noise until they are run about 20 to 30 miles. Also the surface of the road can make a big difference in tire noise so take notice of what kind of surface you're driving on.

That never occurred to me. It just seems too loud for tires. I also can't remember either of my other C3s ever doing this. Good news if that's all it is.

Yes, I've heard gearsets do that. This is very different sound, more like a roar than a whine. Thinking about what you just said, I don't think the sound changes between acceleration and coast. That probably confirms it's the tires. I'll take her out again today and listen again for that.
Cold tires are definitely louder until warmed up and sitting right next to the rear wheel, you're gonna hear it. Change tire pressures and see if the pitch changes.

I am sure you did check, but is the differential fluid level and condition ok?

I think you may be on to it.. Tires make noise some can be loud and the road surface affects it. Theres a hiway near me that after the first time I drove on it, I thought I had a flat.... Tire makers constantly design with noise in mind. ..
