I've been putting Premium Unleaded 91 Octane in my bone stock '72 350.
It's been suggested that because of the ethanol in todays fuel I shouldn't be using over 85 octane and I should add Stabil 360. 1 oz to every 10 gal.
Anyone else doing this?
Ethanol increases octane. I do not run premium in any engine unless I have knock issues. I fail to see the correlation between "not running over 85 octane" and "Ethanol in today's fuels". like cheese and bleach.
you'll probably get lots of people on both sides of the fence, but I see no reason to run premium, nor any reason to add stabil. that includes my 95 LT1 and 97 SL500, both of which require premium, but I do run 89 octane in my 68 L-71.
a stock 72 350 is a low compression engine. Depending on where you live 87 octane or higher should be fine. If the ethanol level is 10% you should be fine.

My bone stock 72' 350 will not run on anything less than premium.
Don't care what everyone else is doing, A/C in summer + regular = pinging.
Been running it on premium with ethanol for decades with no issues.
The only possible impact that you might encounter is ethanol eventually weakening your carb power piston - do a search, pick the piston manufactured from the correct material, and you should be fine. Lars has a nice write up on this somewhere. <<<found it
Bottom line: While I don't care for it I don't see where the ethanol is causing me any issues.
