Ordered Edelbrock intake 2101 and a 1406 carburetor for my 1976 L-82, however neither support an EGR equipped engine. Will taking off the EGR affect performance in any way? Also my existing quad jet
does not have an electric choke the new one does, just run a wire to the new one?

Taking the EGR won't hurt performance. You need a "key on" power source for the electric choke, it will be grounded through the carb body. I suggest the windshield wiper motor. It's close by and only works with the key on.
Will taking off the EGR affect performance in any way?
Yes. It will make it better.
I'm being a little facetious here, since an EGR that operates properly won't appreciably affect performance, at least in theory. In reality, they never seem to work properly, and usually just act like a big vacuum leak.
