Getting hot when climbing a large hill

I thought the issue may have been because I was too lean.
I hooked the wideband back up and I'm a solid 14.0 going up.
I've never seen the water gauge pass 210 in all my other driving but when I go to my Mother in laws it's about 15 minutes at close to 45 degree angle at 30 MPH.
I do have aluminum heads on my 496 with a Dewitts radiator. GM Water pump 19168602. Tried two different 180 thermostats, Stant and Mr Gasket.
Driving around town and freeway driving it sits between 100 and 210.
Any thoughts on what may be happening?
