I installed a new crate motor and when I let it run for about 15 minutes the motor will cut out and die on its own. The temperature seems to hang at 180f and doesn't seem to overheat. Is there something that could be getting hot and shutting it down?

Check for spark when that happens. Check for fuel too, look down the venturies for a squirt of fuel when you open the throttle.

Like 60b I also think that it's probably spark related, will it restart or do you have wait for it to cool down, sounds like a coil or ignition module when it warms it expands and opens a Crack, I'd had this happen once with a non vette, which turned out to be the coil.

HEI ignition ? Mine did the exact same thing to me after 10-15 minutes. Turned out to be a bad module. Now I carry a spare.

As the temperature of the coil goes up, the internal resistance increases and the voltage drops. I had this happen recently because the rotor tine had broken, which overworked the coil and caused the overheating. Good luck.
