I was surprised to see that Zip sells individual parts (e.g., adjusting wheel) for each side separately. I'm sure the other catalog companies do too, and you may even be able to get the parts locally (auto parts store / Chevy dealership).
If you have the time, energy, and money, it'd probably be good to do both sides at the same time. http://www.corvettefaq.com has a link to a great article about parking brakes that shows a "tie-it-up-with-thread-first" trick to get those brake shoe springs back on. Let me know if you can't find it and I'll look. I found it after many, many hours cursing at my springs :crazy:
Check for free movement in the rear cable while you're under there. It can get pretty mucked up and be difficult to move through the shielding after a lot of years of picking up road crap & rusting.
