EGR isn't as bad as most owners expect. It shouldn't be active with low vacuum of WOT. And the recirculated gas cools the combustion which should make for lower engine temps during low RPM cruise. But not if your cruise RPM is to high.
FYI while your car maybe exempt from smog testing the Federal laws still require original smog equipment. It's an issue they/law enforcement can pursue if they want to nail you like after a major accident or caught street racing.
they are ugly but leaving them on doesn't hurt anything, when I pulled my air pump on my 81 I left the stock egr and exhaust recirc ports, just plugged the manifold tubes with a 2 inch colored air filter I got at the local parts store,, its amazng when people who don't know anything about engines see the red paper air filters on each side of the block and assume its something exotic. but the best tip if your going for that look is to replace the vacuum lines with silicone colored lines. I bought a line kit from verocious motorsports in nj and the red hoses match the red ignition wires and really make the engine stand out. just be sure to get the ones meant for vacuum else the cheap silicone ones will collapse under vacuum,

You are correct, in that EGR will affect combustion temps. Often, spark knock can be more prevalent when EGR is removed. Note attached image from a 1975 CRC report.
