I am in the same boat, very limited funds, no space and not too much time. So I've opted to do my car in stages mostly during the winter
  1. First year was getting the car to be completely functional, driving and fun. Pretty much stock
  2. Second was starting to make it mine with 69 side pipe covers, carb improvements, header change and wheels
  3. Third was rebuilding the engine and tranny
  4. This winter is cam and heads upgrade. Upgrade the clutch, clean the engine bay, new suspension. Install 3.70 rear end. Replace all the calipers, brake lines and hoses with stainless steel and braided
Spreading it out helps with the cost and timelines. I bought the suspension over a year ago so theres a lot of planning ahead.

Now you can tilt the body up on each side to check things and replace the fuel lines (if needed) and NOT have the body off.

Your pics look great, I wish my frame looked as clean as yours did when you started (I'd leave it if it looked that good, but I'm lazy). I wish I had seen your foil covering sooner, I'm always wasting time with paper/plastic/tape and then it's a pain to remove. Just genius, thanks.

@corkguy i agree with bj1k, do a little each day. dont try to get it all done in a week. the way i am doing my 64 coupe is: today i will remove the right door glass and regulator, tomorrow the left side, then the vent glass', at the end of a week you will see a lot has gotten done. set small goals. good luck. and remember, take your time and do it right the first time.
