In short I’m looking to add a smallish fuse/relay center to the C3 to run things like cooling fans, possibly a MSD box, and so on. I’m thinking 100 amps and 10-12 circuits would be adequate. Would like to have both the fuses and and relays in the same enclosure. Any suggestions?

Am sure jegs, summit or speedway might have some street rod kits but not sure how small they are. 10 or 12 circuits seems like overkill just to run fans and msd box.
That seems like a lot of extra circuits... and a lot of power to the fuse box. Consider using less power on the box and relays out where they are needed. Most higher power stuff wants it run to the battery anyway (fan main power, MSD box, etc)
But it's not mine so look at the existing kits, lectric ltd, etc
